Ingredients;
Asparagus 250g
Half an onion
Eggs 6
Formaggio di capra 50g
Salt
Black pepper
Extra virgin olive oil

1. Clean and dice the onion, stir-fry with extra virgin olive oil
2. Clean the asparagus, cut them into halves, peel and dice the bottom part
3. Add the asparagus into the pan for a quick stir
4. Beat 6 eggs in a bowl with salt and pepper
5. Add the formaggio di capra into the egg batter
6. Add the egg mixture into the pan
7. Pan-fry for 10 mins or until one side is golden and flip to the other side
8. Serve with more formaggio
